Frosty's Strawberry Snowballs

ree

Welcome to my cozy corner of the internet, where today we're embracing the joy of holiday baking with a delightful twist. As we gather with family and friends, it's the perfect time to indulge in sweet treats, but why not make them a little healthier this year? That's where our star ingredient, locally grown Ontario strawberry powder, comes into play.

One common ingredient in many holiday treats is red food dye, particularly Red Dye 40, a synthetic dye made from petroleum. While it gives a vibrant colour, it's not the healthiest choice. This year, I'm swapping out the synthetic for something natural and local. Our strawberry powder not only adds a beautiful natural hue but also infuses our treats with a subtle, delightful strawberry flavour. Plus, it's a step towards a healthier, guilt-free holiday season!

Now, let’s dive into a recipe that will surely be the highlight of your holiday dessert table - Frosty's Strawberry Snowballs. These cookies are not only fun to make but also a great way to introduce a bit of wholesome goodness into our festive feasts.

Frosty's Strawberry Snowballs

Ingredients:

  • 1 cup (226g) unsalted butter, slightly softened

  • ½ cup (57g) powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon strawberry powder (about 1/3 small package)

  • 2 ¼ cups (279g) all-purpose flour

  • ½ teaspoon salt

  • 1 cup mini chocolate chips

  • Additional powdered sugar for rolling

Instructions:

  1. Preheat the oven to 350°F and line two cookie sheets with parchment paper.

  2. Mix butter, ½ cup powdered sugar, and vanilla extract with an electric mixer until fluffy.

  3. Add flour, salt, and strawberry powder. Mix until the dough comes together.

  4. Stir in the mini chocolate chips. Chill the dough if it is too soft.

  5. Scoop 1 tablespoon balls of dough and place them on the prepared cookie sheets.

  6. Bake for 8-10 minutes until the bottoms are slightly brown.

  7. Cool the cookies for 5-10 minutes, then roll each in powdered sugar and place on a rack to cool further.

As you enjoy these delightful snowballs, remember you're not only treating yourself to a delicious cookie but also supporting local agriculture and making a healthier choice for your family.
