Snow Berry Donuts


Ingredients:

1 cup milk

1 egg

2 tbsp butter

3 cups (415g) all purpose einkorn flour (454g if using non-einkorn flour)

2 tbsp maple syrup

1 tsp salt

2 1/4 tsp rapid rise yeast

oil for frying (we use coconut oil)


Strawberry Glaze

1/2 cup powdered sugar

30g freeze dried strawberry powder (1 small package)

2 tsp vanilla

4 tbsp milk


Instructions:

1. Combine all ingredients into the bowl of an electric mixer, except the milk and butter.

2. In a small sauce pan, melt butter and remove from heat. Stir in the milk and pour into the mixing bowl

3. Mix with a bread hook until dough is smooth and shiny. If dough is still sticky, add an additional 1/4 cup of flour at a time until it is pliable but doesn't stick to your finger when pressed

4. Remove the dough hook and cover the mixing bowl. Let rise for 20 minutes for einkorn, or until doubled if using non-einkorn flour.

5. Turn out risen dough on a well floured surface and roll to about 1/2 inch thick

6. Use a donut cutter to form the donuts.

7. Place cut donuts and holes on wax paper lined baking tray.

8. Continue to re-roll and cut dough until all dough is used.

9. Heat coconut oil in a large skillet to 350 degrees F or over medium heat. The oil should be about 1/2 inch deep.

10. Test heat with a donut hole. If it starts to cook right away the oil is ready. If not, leave the doughnut hole until it starts to bubble the oil then add additional donuts.

11. Cook on one side until the bottom half starts to brown, flip and cook another 1-2 minutes, or until brown.

12. Remove from oil and drain on a paper towel lined baking tray.

13. Repeat until all donuts are fried.

14. Mix glazes. If glaze is too thick, add 1/4 tsp more milk at a time until it reaches the right texture. Should be thick but runny enough to dip hot donuts in to coat.

15. Dip top of hot donuts into desired glaze and place on platter. Serve warm.

Whitty Tips for Perfect Donuts Every Time
  • Make-Ahead Magic: Mix your dough ahead of time and store it in the fridge. When you’re ready to bake, let the dough come to room temperature for about 45 minutes, then roll and cut.

  • Storing Leftovers: If you have any donuts left (a big if!), there’s no need to refrigerate them.

  • Reheat for Freshness: To serve the donuts warm, place UNGLAZED donuts in a preheated oven (350F) for about 3 minutes, then glaze.

  • Freezing for Later: These donuts can be stored in the freezer for 2 to 3 months. Freeze the glaze separately or make it fresh when needed.
