Bringing Local Strawberries to Your Breakfast Table

Welcome back, friends, to our holiday recipe series! Today, we're excited to share a delightful breakfast treat that combines health with heavenly taste: Strawberry Snowcap Waffles. Made with locally sourced strawberries, these waffles aren’t just a delicious start to your day; they’re a tribute to our community's agricultural richness.

The Local Touch:

Our recipe features strawberry powder made from locally grown strawberries, highlighting the fresh, natural flavours and supporting our local farmers. By choosing local ingredients, we’re not only enjoying a tastier meal but also contributing to a sustainable food system.

These waffles are a testament to how simple ingredients, when thoughtfully combined, can create something truly extraordinary. They're a reminder of the sweetness of home, the warmth of community, and the joy of a healthy, delicious start to your day.

Ingredients:

For the Waffles:

  • 2 cups (240 g) All-Purpose Einkorn Flour (or 2½ cups (240 g) Whole Wheat Einkorn Flour for a whole grain option)

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup (240 g) milk

  • 1 cup (230 g) yogurt

  • 6 tablespoons (84 g) unsalted butter, melted

  • 3 large eggs, separated

For the Whipping Cream:

  • 30g strawberry powder (1 small package)

  • 1 3/4 cup (420ml) heavy whipping cream

  • 1 cup (115g) powdered sugar

Instructions:
  1. Prepare for Waffle Magic: Preheat your waffle iron and a baking sheet in a 300°F oven.

  2. Mix Dry Ingredients: Whisk together flour, sugar, baking powder, baking soda, and salt.

  3. Combine Wet Ingredients: In a separate bowl, mix milk, yogurt, melted butter, and egg yolks.

  4. Blend the Mixtures: Gently combine the wet and dry ingredients.

  5. Whip the Egg Whites: Beat the egg whites until soft peaks form, then fold into the batter.

  6. Bake the Waffles: Use the right amount of batter for your waffle type and cook until golden and crisp.

  7. Create the Strawberry Whipping Cream: Whip together strawberry powder, heavy cream, and powdered sugar until stiff peaks form.

Serving Suggestion:

Top these golden waffles with a lavish dollop of strawberry whipping cream, drizzle with rich maple syrup, and garnish with freeze-dried strawberry slices. This snowy, strawberry delight is an idyllic treat for a cozy winter morning!
