Ingredients: 3 tbsp olive oil, divided; 1lb boneless, skinless chicken breast (2 breasts); 2-3 tbsp fajita seasoning (1 package); 1 large yellow onion, diced; 3 bell peppers, any colour, sliced into 1ʺ long strips; 5 cloves garlic (5 tsp freeze-dried garlic); 2 tbsp Whittington Farm tomato powder; 2 cups chicken broth; 1/2 cup heavy cream; 14.5oz can diced tomato; 10oz can of green chiles (Rotel brand) - use half if you don't like it too spicy; salt and pepper to taste; 450g dried penne pasta
